Tomato Yam Soup Recipe
- 1 lg. yam, cut up
- 3 sm. leeks, washed & thinly sliced
- 2 tbsp. butter
- 2 (10 1/2 ounce.) cans chicken broth
- 2 lg. tomatoes, sliced or possibly 1 can stewed tomatoes
- 1/2 teaspoon salt (I omit)
- 1/4 teaspoon basil (dry)
- 1.
- Saute/fry leeks.
- 2.
- Add in all remaining ingredients.
- Bring to a boil; reduce heat and simmer about 20 min.
- 3.
- Puree.
- 4.
- Return to heat.
- Heat and serve.
- Preparation time: 30-45 min.
