Whole Grain Pancakes

  1. In one bowl combine first 5 ingredients.
  2. In second bowl combine last 3 ingredients.
  3. Pour wet ingredients into dry mix and stir until combined -- don't overmix -- lumps are okay.
  4. Griddle is ready to use when you let a few drops of water fall on it and they bounce and sputter.
  5. It's too hot if drops vanish, and not hot enough if drops sit and bubble.
  6. Pour batter onto grill and flip it when bubbles start to appear on top, and you've checked to see if bottom is browned.
  7. Only turn once; second side will cook faster and not brown as evenly.
