Whole Grain Pancakes
- 12 cup all-purpose flour, sift before measuring
- 12 teaspoon salt
- 12 teaspoon double-acting baking powder
- 34 teaspoon baking soda
- 1 cup whole grain wheat flour
- 2 tablespoons honey (can use molasses or sugar)
- 1 egg
- 2 cups buttermilk (or yogurt)
- In one bowl combine first 5 ingredients.
- In second bowl combine last 3 ingredients.
- Pour wet ingredients into dry mix and stir until combined -- don't overmix -- lumps are okay.
- Griddle is ready to use when you let a few drops of water fall on it and they bounce and sputter.
- It's too hot if drops vanish, and not hot enough if drops sit and bubble.
- Pour batter onto grill and flip it when bubbles start to appear on top, and you've checked to see if bottom is browned.
- Only turn once; second side will cook faster and not brown as evenly.
