Banana Caramel Pie

  1. DO CRUST.
  2. In a medium-sized bowl, combine first 2 ingredients and press into an 8x8x2 pan.
  3. Set aside.
  4. DO FILLING.
  5. In a frying pan, melt sugar until caramelized.
  6. Remove from heat.
  7. Add butter and stir to combine.
  8. Stir in 1/2 cup cream.
  9. Mix well.
  10. In a bowl, beat egg yolks.
  11. Add the egg yolks to the slightly cooled caramel mixture a little at a time, stirring constantly.
  12. Return to fire and cook until slightly thickened.
  13. Cool completely.
  14. Whip 1/2 cup of chilled all-purpose cream and fold into cooled caramel.
  15. Reserve 2 tablespoons of caramel for the topping.
  16. DO TOPPING.
  17. Arrange sliced bananas on the prepared piecrust and top with caramel filling.
  18. Decorate with the reserved caramel topping.
  19. Chill and serve.
