Mexican Chef's Salad Recipe
- 1 onion
- 4 tomatoes
- 1 head lettuce
- 4 ounce. grated Cheddar cheese
- 8 ounce. French or possibly Thousand Island dressing (Catalina)
- Warm sauce (optional) (La Victoria green taco sauce)
- 1 c. corn tortilla chips (taco-flavored Doritos)
- 1 lg. avocado
- 1 pound grnd beef
- 1 (15 ounce.) can kidney beans
- 1/4 teaspoon salt
- Chop onion, tomatoes, lettuce.
- Toss with grated cheese, dressing and warm sauce to taste.
- Crunch and add in chips.
- Slice and add in avocado.
- Brown grnd beef, add in liquid removed kidney beans and salt to grnd beef and simmer for 10 min.
- Mix into cool salad.
- Decorate with extra chips, avocado and tomato.
- Serves 6.
