Grilled Apricot Blues

  1. Brush one side of each bread slice with butter.
  2. Spread apricot preserves on 4 of the slices.
  3. Top with spinach, dried apricots and blue cheese.
  4. Cover with remaining 4 slices of bread.
  5. Grill 3-4 minutes until golden brown and cheese is melted.
