Herbed Cornish Hens Recipe

  1. Heat oven to 350 degrees.
  2. Dry cavities of hens (don't rub cavities with salt).
  3. Mix croutons and olives.
  4. Stuff each hen loosely with 1/3 c. stuffing; fasten openings with skewers and lace shut with string.
  5. Place hens, breast side up, in shallow baking pan.
  6. Mix remaining ingredients; pour over hens.
  7. Roast uncovered till hens are done, spooning lemon mix over hens every 20 min, about 2 hrs.
  8. To serve, cut hens into halves along backbone from tail to neck.
  9. Makes 6 servings.
