Carole's Rhubarb Cake
- 12 cup butter
- 1 cup brown sugar
- 12 cup granulated sugar
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 12 teaspoon salt
- 1 teaspoon baking soda
- 1 12 cups rhubarb, raw, diced
- 12 cup granulated sugar
- 1 teaspoon ground cinnamon
- Preheat oven to 375 degrees.
- Grease and flour a 13x9x2 pan and set aside.
- In medium bowl combine flour, salt, and baking soda.
- Set aside.
- In small bowl combine 1/2 cup granulated sugar and cinnamon.
- Set aside for topping.
- In large mixing bowl, cream together butter, brown sugar and 1/2 cup granulated sugar.
- Beat in egg and vanilla, then mix in buttermilk.
- Gradually add flour mixture, mixing well, and then fold in the rhubarb.
- Pour into prepared 13x9x2 pan and sprinkle the cinnamon/sugar mixture over the top.
- Bake for 30 to 35 minutes or until toothpick tested done.
- Remove from oven and let cool completely before covering to store.
