Bacon N' Broccoli Mac N' Cheese

  1. Preheat oven to 350 degrees.
  2. Boil elbow macaroni in salted water for 10 minutes, drain and set aside.
  3. Heat butter in saute pan and add chopped bacon and shallots.
  4. Cook until bacon is crispy and shallots are tender.
  5. Add paprika and flour to form a roux, stirring to incorporate and cook down flour.
  6. Add milk, heat until simmering.
  7. Add cheese and melt.
  8. Stir to incorporate, add salt and pepper to taste.
  9. Add macaroni and broccoli and pour into a greased casserole dish.
  10. Top with parmasean cheese and bake uncovered for 20 minutes.
