Herb Salad Dressing Claudio's

  1. In a blender or food processor fitted with the steel blade blend in all ingredients except oil.
  2. With motor running add 1 cup plus 2 tablespoons each of olive oil and the safflower oil in a stream.
  3. Blend until mixture is smooth and thick.
  4. If the dressing separates, beat it gradually into a large egg yolk.
  5. Makes about 3 1/4 cups.
