Pulled Pork With Root Beer Sauce

  1. Trim fat from meat.
  2. If necessary, cut meat to fit into a 3-1/2- to 5-quart slow cooker.
  3. Sprinkle meat with salt and pepper.
  4. In a large skillet, brown meat on all sides in hot oil.
  5. Drain off fat.
  6. Transfer meat to cooker.
  7. Add onions, 1 cup root beer and garlic.
  8. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
  9. For sauce, in a medium saucepan combine 3 cups root beer and the chili sauce.
  10. Bring to a boil; reduce heat.
  11. Boil gently, uncovered, stirring occasionally, about 30 minutes or until mixture is reduced to 2 cups.
  12. If desired, add root beer concentrate and hot pepper sauce.
  13. Transfer meat to a cutting board.
  14. or serving platter.
  15. Using a slotted spoon, remove onions from cooking juices and place on a serving platter.
  16. Discard juices.
  17. Using 2 forks, pull meat apart into shreds.
  18. To serve, if desired, line buns with lettuce and tomato.
  19. Add meat and onions; spoon on sauce.
