Orange, Passionfruit & Yogurt Cupcakes

  1. Preheat oven to 340 degrees F. Using electric beaters, beat butter, sugar and orange rind in a large bowl for 4 to 5 minutes or until light and fluffy.
  2. Gradually add eggs, and beat until well combined.
  3. Using a large metal spoon, fold through orange juice, the passionfruit pulp, yogurt, flour and baking powder until just combined.
  4. Spoon the cake mixture into small patty cases.
  5. Bake for 15 to 20 minutes or until golden and a skewer inserted into the centre of a cupcake comes out clean.
  6. Remove from oven and serve warm.
