50/50 Olive Oil/Coconut Oil Blend Healthy Chicken Stir Fry
- 1 tablespoon oil blend
- 1/2 cup sliced carrots
- 2 teaspoons minced fresh garlic
- 2 teaspoons minced fresh ginger
- 1 cup cooked chicken
- 2 teaspoons hoisin sauce
- 2 tablespoons soy sauce
- 1 cup sliced mushrooms
- 1 bunch scallion, chopped
- 1/2 cup chopped broccoli
- Heat the oil in large pan on high heat.
- Add the carrots, garlic, and ginger.
- Cook the mixture until tender, stirring quickly and then add the chicken, hoisin sauce, and soy sauce.
- Keep stirring for about 3 to 4 minutes.
- Add the mushrooms, scallions, and broccoli.
- Cook the mixture about 2 minutes and serve.
