Fennel With Apples and French Vinaigrette

  1. Cut the leaves off the fennel, and thoroughly clean the stalks and bottom of the bulb.
  2. Cut into 1 inch pieces.
  3. Peel and cut the apple into thin 1 inch pieces.
  4. Add to the fennel.
  5. Drizzle with olive oil.
  6. In a small bowl, mix the lemon juice, vinegar and mustard.
  7. Season with salt and a bit of black pepper to taste.
  8. Add to the fennel mixture, mix and serve.
