Cuban Black Bean And Ham Pilaf Recipe
- 1/2 c. sliced green onions
- 1 med. green pepper
- 1 clove garlic
- 1 tbsp. vegetable oil
- 2 1/2 c. quick cooking brown rice
- 2 1/2 c. chicken broth
- 3/4 teaspoon oregano
- 15 ounce. can black beans, rinsed and liquid removed
- 4 ounce. fully cooked ham, cut into bite size pcs (1 c.)
- 2 med. tomatoes, minced
- In large saucepan, cook green onions, pepper strips and garlic in warm oil for 1 minute.
- Add in uncooked rice, cook and stir for 2 min more.
- Stir in broth, beans, ham and oregano.
- Bring to boiling, reduce heat.
- Cook for time on rice package directions or possibly till liquid is absorbed.
- Stir in tomato pcs.
- Serves 4.
