Gourmet Macaroni and Cheese
- 12 lb macaroni noodles
- 1 tablespoon shortening
- 1 tablespoon flour
- 1 12 cups milk
- 1 teaspoon salt
- 18 teaspoon pepper
- 1 teaspoon mustard
- 12 cup chopped cheese
- 12 cup green pepper, chopped and cooked
- 12 cup minced olive (black or green)
- 2 tablespoons chopped pimiento
- 12 cup breadcrumbs, for top
- 1 tablespoon butter
- Cook macaroni in boiling salted water until tender; drain.
- Melt shortening in a med sized skillet.
- Add flour, stirring until smooth.
- Add milk gradually.
- Stir over heat until thick.
- Add salt, pepper, mustard, cheese and green pepper.
- Remove from heat.
- Place a layer of macaroni in a greased baking dish.
- Cover with olives and pimentos.
- Continue until both ingredients are used up.
- Add sauce, sprinkle top with bread crumbs and dot top with butter.
- Bake at 300 until bread crumbs are browned.
