Little Jam Tarts

  1. Preheat oven 350F
  2. TO MAKE PASTRY...
  3. cream butter, salt and sugar together until fluffy and a pale colour
  4. whisk egg in a small bowl
  5. slowly add egg to butter mixture a little at a time, mixing well
  6. sift flour over butter mixture, mix just until dough forms, don't over mix
  7. turn out onto lightly floured surface, cover and let pastry rest 20 - 25 min
  8. roll pastry to 1/4" thickness, cut out circles using a 1 1/4" round cutter
  9. line mini muffin tin with each circle of pastry
  10. TO MAKE FILLING...
  11. in microwave safe bowl, microwave jam 20 - 30 seconds or until softened
  12. stir in lemon juice and cornstarch
  13. fill each tart shell with about 2 tsp jam mixture
  14. bake 12 - 15 minutes or till pastry turns golden brown
