Orange & Fennel Chicken Salad
- 1/2 cup good mayonnaise
- 1/4 cup plain yogurt
- 2 tbsp. tbsp.orange juice
- Zest of half an orange
- 4 cups of diced cooked chicken(I use roasted with skin off)
- 1 cup halved red seedless grapes
- 3/4 cup diced fennel bulb
- 1/4 cup toasted slivered almonds
- 2 tbsp. chopped fennel fronds
- 1 tbsp. chopped fresh tarragon
- Kosher salt & pepper to taste
- Whisk mayonnaise,yogurt,orange juice and zest together in a bowl.
- Stir in the chicken, grapes, diced fennel, almonds, fennel fronds, and tarragon.
- Season to taste with kosher salt & pepper.
- Serve over a bed of greens or cover and chill.
