Roast Aubergine (Eggplant) and Mint Salad

  1. Preheat the oven to 200 degrees centigrade.
  2. Cube the aubergines and place in a large roasting tin witht the garlic and 2 Tbs of the olive oil.
  3. Season with salt and pepper and roast for 25-30 minutes, stirring frequently until golden brown.
  4. Remove from the oven and stir in the shallots, mint, corriander, lime juice and remaining olive oil.
  5. Season to taste and serve warm or at room temperature.
