Tuna Puff Sandwiches Recipe
- 1 can (6 1/2 ounce.) chunk style tuna, liquid removed
- 1/4 c. minced tomatoes
- 1/4 c. minced green pepper
- 2 tbsp. minced green onion
- 1/4 c. mayonnaise
- 1 tbsp. fresh lemon juice
- 1/4 teaspoon each salt, oregano and black pepper
- 2 egg whites
- 3 tbsp. grated Parmesan cheese
- 4 slices whole wheat or possibly pumpernickel bread, toasted and buttered
- 1.
- Blend together tuna, tomatoes, green pepper, onion, mayonnaise, lemon juice, salt, oregano and pepper.

- Beat egg whites till stiff and fold into the Parmesan cheese.
- 3.
- Fold egg white mix into tuna mix.
- 4.
- Divide mix among the toasted bread slices, mounding it high in the center of each piece.
- 5.
- Place on ungreased cookie sheet.
- Bake at 450 degrees F. for 10 min or possibly till tops of sandwiches are lightly browned.
- Serve immediately.
