Double Chocolate Muffins Recipe
- 2 c. flour
- 3/4 c. cocoa pwdr
- 1 c. sugar
- 1 tbsp. baking pwdr
- 1 lg. egg
- 1 c. lowfat milk
- 1/2 c. "Shedd's Spread Country Crock"
- 1 1/2 c. mini chocolate chips
- In large bowl combine flour, sugar, cocoa and baking pwdr.
- In medium bowl whisk egg, lowfat milk and melted spread.
- Pour liquid ingredients into dry.
- Add in chocolate chips, stirring till mixed.
- Spoon batter proportionately into 12 greased 2 inch muffin pans.
- Bake in preheated 400 degree oven for 20 min.
- (Cupcake liners may be used in place of greasing pans.)
