Grilled Brioche Roll with Blueberry and Vanilla Mascarpone
- 4 brioche rolls
- 4 tsp. melted butter
- 1/2 c. mascarpone
- 1 tbsp. sugar
- 1/2 tsp. vanilla extract
- 2 c. blueberries
- To grill brioche: Slice brioche rolls in half lengthwise, then brush eat cut side with 1/2 teaspoon melted butter.
- Grill cut side down over medium-high heat until lightly toasted, about 30 seconds per side.
- Then flip and continue with the toppings below.
- To make the blueberry and vanilla mascarpone: Mix mascarpone with sugar and vanilla extract.
- Transfer grilled brioche to plates, add a dollop of mascarpone mixture, then top with blueberries.
