Salmon Fajitas
- 4 pieces Salmon Fillets, Skin Removed
- 2 Tablespoons Ground Cumin
- 1 whole Papaya
- 2 whole Tomatoes
- 1 whole Red Onion
- 1 whole Ripe Avocado
- 1/2 cups Fresh Cilantro
- 1 whole Lemon, Juiced
- 2 whole Limes, Juiced
- 1 dash Cayenne Pepper
- Flour Tortillas, For Serving
- 1.
- Dust the salmon fillets with cumin.
- 2.
- Grill, bake (at 350F) or broil the salmon 5-7 minutes on each side to desired doneness (cook longer if you like your fish well done).
- 3.
- Dice papaya, tomatoes, onion and avocado and place in a bowl.
- Dice cilantro and add to the bowl.
- 4.
- Juice lemon and limes and add to the bowl with a dash of cayenne pepper.
- (Add more lemon, lime and/or cayenne to your liking.)
- 5.
- Warm tortillas.
- 6.
- Flake salmon into tortilla and top with a huge glop of salsa.
- Yum-o!
