Sweet Spareribs With Garlic

  1. Place the ribs in a large roaster, cover with water, and bring to a boil over high heat.
  2. Lower the heat, skim the foam, cover the pot and simmer for 30 minutes.
  3. with tongs, transfer the ribs to paper towels to drain, discarding the water.
  4. Preheat the oven to 300*.
  5. In a 10" saute pan, melt the butter.
  6. add the onions and garlic and saute over medium low heat until the onions are transparent, about 15-20 minutes -- don't rush this step or they will burn.
  7. add the lemon juice, soy sauce,curry powder, salt, pepper and brown sugar.
  8. simmer, uncovered, until the ingredients are well blended and heated through -- 3-5 minutes.
  9. place the parboiled ribs in a shallow baking pan.
  10. cover with the sauce and bake, covered for 2 hours.baste occasionally.
  11. the ribs should be tender and deeply glazed.
