Moist Chocolate Cake with Coffee
- 2 cup All- purpose flour
- 1 tsp Salt
- 1 tsp Baking powder
- 2 tsp Baking soda
- 3/4 cup Unsweetened cocoa
- 2 cup Sugar
- 1 cup Vegetable oil
- 1 cup Hot coffee
- 1 cup Milk
- 2 Eggs
- 1 tsp Vanilla extract
- 1 FAVORITE ICING
- 1 cup Milk
- 5 teablespoon All-purpose flour
- 1/2 cup Butter, softened
- 1/2 cup Shortening
- 1 cup Icing sugar
- 1 tsp Vanilla extract
- Preheat oven to 325F Fahrenheit.
- Sift together dry ingredients.
- Add oil, coffee and milk.
- Mix with an electric mixer at medium speed for 2 minutes.
- Add eggs and vanilla.
- Mix for another 2 minutes.
- Pour into 2 greased and floured 9" cake pans.
- Bake for 25-30 minutes.
- Cool cake 15 minutes before removing from pan.
- meanwhile, Whisk milk and flour in a saucepan over heat.
- Cook until thick.
- Cover and refrigerate.
- Cream butter, shortening, sugar and vanilla.
- Add chilled milk mixture and beat for 10 minutes.
- Assemble and frost cake.
