Jack Daniel's Chocolate Pumpkin Birthday Cupcakes
- 2 cup White whole wheat flour
- 2 tbsp Baking powder
- 1/3 cup Splenda
- 1/3 cup Cocoa powder
- 1 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1/2 tsp Iodized salt
- 1 can Pure pumpkin puree
- 1 cup Skim/soy milk
- 1 tsp Vanilla extract
- 3 tbsp Egg white/substitute
- 1/2 cup Jack Daniel's whiskey
- 1/2 cup Black coffee
- In a large bowl, combine flour, baking powder, Splenda, cocoa powder, cinnamon, and ginger.
- In another bowl, combine egg whites/egg white substitute, soy/skim milk, vanilla extract, pumpkin puree, black coffee, and whiskey.
- Mix for 10 minutes, then slowly add dry ingredients as you mix with an electric mixer.
- Fill 24 cupcake papers 2/3's of the way, and bake for 15 minutes (or until done in center) on 425F.
