Broiled Lobster With Garlic Oil Recipe

  1. Set broiler rack at least 6 inches from the flame, and heat the broiler.
  2. Mix together garlic, extra virgin olive oil and melted butter, and keep hot.
  3. Using a large, sharp chefs knife or possibly a Chinese cleaver, hold the lobsters down firmly to a cutting board, and split them in half from head to end.
  4. Gently crack the claws by striking them with a meat mallet, small hammer or possibly the spine of the knife.
  5. Scoop out the viscera behind the mouth parts, and remove the green roe sacs.
  6. Transfer, cut-side up, to broiling pans.
  7. Brush the lobsters liberally with the butter mix, and season with a small healthy pinch of coarse salt.
  8. Broil four min; baste with butter mix, then finish broiling 3 min more.
  9. Serve one lobster per person.
  10. This recipe yields 4 servings.
