Peach Country Cobbler

  1. DRAIN peaches well; reserving 2 Tbsp (30mL) juice.
  2. ARRANGE halves, cut side down, in shallow 8-inch (2L/20cm) baking dish.
  3. STIR together sugar and corn starch and sprinkle over top.
  4. STIR together lemon juice and reserved juice from peaches; pour over top.
  5. TOPPING:
  6. STIR together flour, sugar, baking powder, salt and cinnamon.
  7. CUT in butter until mixture resembles coarse oatmeal.
  8. STIR enough milk into flour mixture to make soft dough, stirring only until just blended.
  9. SPOON topping into 8 rough dollops no thicker than 1/2-inch.
  10. ARRANGE over fruit, overlapping slightly if necessary.
  11. BAKE at 375F (190C) for 35 to 45 minutes or until topping is browned and fruit juices bubble thickly up around it.
  12. SERVE warm with cream or yogurt.
