Peach Country Cobbler
- 2 can (14oz/398mL each) peach halves in light syrup
- 1/4 cup granulated sugar
- 2 tsp. corn starch
- 2 Tbsp. lemon juice
- TOPPING:
- 3/4 cup whole wheat flour
- 1/2 cup all-purpose flour
- 2 Tbsp. granulated sugar
- 1 Tbsp. Magic Baking Powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 cup butter or margarine
- 3/4 cup milk or cream
- YOGURT CHEESE:
- 3 cups low fat yogurt
- 2 Tbsp. granulated sugar
- 1 tsp. grated lemon rind
- DRAIN peaches well; reserving 2 Tbsp (30mL) juice.
- ARRANGE halves, cut side down, in shallow 8-inch (2L/20cm) baking dish.
- STIR together sugar and corn starch and sprinkle over top.
- STIR together lemon juice and reserved juice from peaches; pour over top.
- TOPPING:
- STIR together flour, sugar, baking powder, salt and cinnamon.
- CUT in butter until mixture resembles coarse oatmeal.
- STIR enough milk into flour mixture to make soft dough, stirring only until just blended.
- SPOON topping into 8 rough dollops no thicker than 1/2-inch.
- ARRANGE over fruit, overlapping slightly if necessary.
- BAKE at 375F (190C) for 35 to 45 minutes or until topping is browned and fruit juices bubble thickly up around it.
- SERVE warm with cream or yogurt.
