Hunter-Style Chicken

  1. In a 5- to 6-quart slow cooker, whisk together the wine, tomato paste, red pepper, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  2. Add the garlic, potatoes, rosemary, onion, olives, and bay leaves (if using) and toss to combine.
  3. Add the tomatoes to the slow cooker, crushing them with your hands as you add them.
  4. Coat the chicken in the flour and add it to the slow cooker along with any remaining flour, nestling it in the vegetable mixture.
  5. Scatter the mushrooms over the top and cook, covered, until the chicken is cooked through, 4 to 5 hours on high or 6 to 7 hours on low.
  6. Sprinkle with parsley and serve with crusty bread, if desired.
