Hunter-Style Chicken
- 1/2 c. dry white wine
- 1 tbsp. tomato paste
- 1/4 tsp. crushed red pepper
- kosher salt
- Pepper
- 6 clove garlic
- 1/2 lb. small new potatoes
- 2 sprig rosemary
- 1 medium onion
- 1/2 c. pitted green olives
- 4 bay leaves
- 1 can whole tomatoes
- 4 chicken legs
- 2 tbsp. all-purpose flour
- 8 oz. cremini mushrooms
- chopped parsley
- Crusty bread
- In a 5- to 6-quart slow cooker, whisk together the wine, tomato paste, red pepper, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
- Add the garlic, potatoes, rosemary, onion, olives, and bay leaves (if using) and toss to combine.
- Add the tomatoes to the slow cooker, crushing them with your hands as you add them.
- Coat the chicken in the flour and add it to the slow cooker along with any remaining flour, nestling it in the vegetable mixture.
- Scatter the mushrooms over the top and cook, covered, until the chicken is cooked through, 4 to 5 hours on high or 6 to 7 hours on low.
- Sprinkle with parsley and serve with crusty bread, if desired.
