Mixed Berry Pie

  1. Mix berries together in a large bowl.
  2. Set aside.
  3. Pour 1/3 cup of water in a small bowl.
  4. Add splenda and mix well.
  5. sprinkle gelatin over the top and let stand 1 minute.
  6. Bring the remaining 1/3 cup of water to a boil and pour over the top of the gelatin mixture.
  7. Stir until dissolved.
  8. Whisk raspberry jam into gelatin mixture until well-blended.
  9. Place bowl into an ice water bath and stir constantly until mixture just begins to thicken (about 1 minute)
  10. Pour over berries, gental stirring to coat.
  11. Pour into crust and refrigerate until set, about 1 hour.
  12. Chill for 1 hour
