Zucchini With Tomatoes

  1. To Microwave: place all ingredients in a covered microwavable bowl or covered casserole, and cook on high 5 to 8 minutes until vegetables are softened.
  2. CAUTION!
  3. BOWL WILL BE EXTREMELY HOT!
  4. Stir and serve.
  5. Stovetop: Combine all ingredients and cook over low heat for 20 to 30 minutes until combined and cooked through.
  6. Stir occaisionally.
  7. Grill: Place ingredients in foil pouch(or create your own using tin foil).
  8. and place on grill over low flame, or medium to low heat approx 20 minutes.
  9. Bake: Place all ingredients into a covered casserole dish, or cover a pyrex with foil tightly, and bake at 350 degrees for about 30 minutes.
  10. Serve over rice, or by itself as a side dish.
  11. This dish creates a lot of "juice" so have a good loaf of bread sliced and ready for dipping!
