Zucchini With Tomatoes
- 4 zucchini, peeled and sliced (small)
- 2 tomatoes, rough chopped
- 2 tablespoons butter
- 12 cup grated pecorino romano cheese
- To Microwave: place all ingredients in a covered microwavable bowl or covered casserole, and cook on high 5 to 8 minutes until vegetables are softened.
- CAUTION!
- BOWL WILL BE EXTREMELY HOT!
- Stir and serve.
- Stovetop: Combine all ingredients and cook over low heat for 20 to 30 minutes until combined and cooked through.
- Stir occaisionally.
- Grill: Place ingredients in foil pouch(or create your own using tin foil).
- and place on grill over low flame, or medium to low heat approx 20 minutes.
- Bake: Place all ingredients into a covered casserole dish, or cover a pyrex with foil tightly, and bake at 350 degrees for about 30 minutes.
- Serve over rice, or by itself as a side dish.
- This dish creates a lot of "juice" so have a good loaf of bread sliced and ready for dipping!
