Bacon-Potato Soup

  1. In da deep, heavy pot, saute bacon for a few minutes.l.
  2. Add onions and cook 5-10 minutes or until soft but not brown.
  3. Blend in flour and gradually stir in bouillon.
  4. Add potatoes; cover and simmer one hour.
  5. Mix egg yolks into sour cream.
  6. Spoon a little hot soup into cream mixture, then slowly stir cdream mixture into hot soup.
  7. Simmer 5-8 minutes; do not boil.
  8. Add herbs.
  9. (I think this step is optional - good without).
  10. Ladle into deep, warmed soup bowls or mugs.
