California Salad, Starring Salmon
- 14 cup mayonnaise
- 2 tablespoons olive oil
- 12 teaspoon Dijon mustard
- 18 teaspoon salt
- 18 teaspoon black pepper
- 1 tablespoon chopped parsley
- 1 tablespoon chopped basil
- 1 (6 ounce) can salmon, drained and broken up
- 12 cup walnuts, toasted
- 12 cup red seedless grapes, quartered
- 3 green onions, sliced
- salt
- 4 cups mixed baby greens
- Dressing: In a measuring cup, whisk together mayo, oil, mustard, salt, pepper, parsley and basil.
- Salad: in a bowl, combine salmon, walnuts, grapes and onions.
- Add dressing and toss to coat.
- Season to taste with salt.
- Place greens on a serving platter.
- Spoon salmon over top.
- Serve.
