Broiled Feta Cheese With Capers

  1. Preheat oven to BROIL.
  2. Place the feta slices on a parchment lined baking sheet and broil on both sides until lightly browned.
  3. On 4 salad plates divide and arrange the lettuce.
  4. Garnish with the onion rings.
  5. Place a slice of the broiled feta cheese on top of each lettuce-onion mound.
  6. Place 2 tomato slices on each mound.
  7. Pour the warmed olive oil over the mixture and top with the capers and basil.
  8. Sprinkle each serving with black pepper.
  9. Garnish a lemon wedge on top of each serving.
