Flank Steak and Red Onion

  1. Heat grill to high.
  2. Rub both sides of steak with oil, & season generously with salt & pepper.
  3. Grill for 5 to 7 minutes per side for medium-rare.
  4. Let stand for 10 minutes.
  5. (I cooked mine per 5 minutes per side & it was more medium well - FYI).
  6. Meanwhile, drizzle onion slices with oil, & season with salt & pepper.
  7. Grill, turning occasionally, until cooked through, 6 - 8 minutes per side.
  8. Thinly slice meat across the grain, & serve topped with grilled onion.
