Microwave Vegetable Casserole Recipe
- 1 (16 ounce.) can shoe peg corn (liquid removed)
- 1 (16 ounce.) can French style green beans (liquid removed)
- 1 c. minced celery
- 1 c. minced onion
- 1 c. green pepper
- 1 c. Cheddar cheese (grated)
- 1 (8 ounce.) carton lowfat sour cream
- 1 (10 1/2 ounce.) can cream of celery soup
- 4 c. cheese crackers (crumbled)
- 1 (2 ounce.) pkg. sliced almonds
- 1/2 stick melted butter
- Mix first 8 ingredients together in 2 1/2 qt casserole dish.
- Cook on medium high or possibly 80% power 8-10 min, stirring once after 5 min.
- Remove.
- Heat butter in a separate microwave safe dish for abut 40 seconds on high.
- Mix crackers and almonds with butter.
- Sprinkle on top of casserole and cook on high 3-5 min or possibly till bubbly.
- Let stand 5 min before serving.
- Serves 16.
