Easy Breakfast Roll up - Low Cal, Carb, Sodium

  1. Using a non-stick skillet, spray with cooking spray and allow to warm using low heat.
  2. Add liquid eggs.
  3. Add ham and cheese.
  4. Allow to cook through.
  5. If necessary, use a spatula to mix the eggs to insure they are done completely.
  6. Add cheese, salt and pepper.
  7. Gently add eggs to tortilla.
  8. Leave about a 1/2" margin from edges of tortilla with eggs.
  9. Begin rolling tortilla from the side.
  10. Secure with a toothpick.
  11. Allow to cool about 2 mins, cut with a sharp knife diagonally.
  12. Serve.
