German Coffee Cake

  1. Preheat oven to 375F.
  2. Lightly grease a 9x9-inch square pan.
  3. Melt margarine, stir in brown sugar and cinnamon, and set aside.
  4. Sift together flour, baking powder, sugar, and salt in a large bowl.
  5. Cut in shortening with a pastry blender until size of small peas.
  6. Make a well in the center (volcano).
  7. In another bowl, slightly beat egg with a whisk.
  8. Add in milk and vanilla.
  9. Add the liquid ingredients to the well, and mix until moistened.
  10. Put batter evenly into cake pan.
  11. Sprinkle cinnamon topping over.
  12. Bake for 30-35 minutes.
