Moist Potato Chocolate Sandwiches

  1. Add the chocolate to the 2 teaspoons of milk and heat in the microwave for 30 seconds.
  2. Knead together well.
  3. Boil the potatoes or microwave them, and then mash.
  4. Preheat the oven to 170C.
  5. Add the granulated sugar to the potatoes, then add the remaining milk.
  6. Mix well with both additions.
  7. Combine the flour, cocoa powder, and baking powder and sift into the potato mixture.
  8. Lightly mix everything together.
  9. Shape into 4 cm slightly flat balls, place on a parchment paper lined baking tray.
  10. Bake for 15 minutes at 170C.
  11. When they have finished baking, cool on a cooling rack.
  12. Once cooled, make pairs and spread a teaspoon of chocolate cream onto one potato cake in each pair to make a sandwich.
