Moms Chicken Pot Pie

  1. Melt the butter and saute the chopped onion, celery, and carrots (add peas if you want).
  2. When soft, stir in the flour.
  3. Mix the chicken broth with half-and-half and gradually stir into vegetable mixture.
  4. Add a shake of salt and pepper.
  5. When mixture thickens, add the shredded cooked chicken.
  6. Pour into a deep dish pie plate.
  7. Top with Pillsbury pie crust, poke with a fork to vent, and bake for 40 minutes.
  8. Serve with rice and applesauce.
  9. Comfort food at its best!
