Shrimp With Garlic Pesto Pasta
- 1 (12-oz) package of SeaPak Shrimp Scampi, frozen
- 1 pound linguine
- 1/2 pint of cherry tomatoes, cut in half (about 1 cup)
- 1/4 cup pesto
- 1/2 cup Parmesan cheese
- Cook shrimp scampi according to package instructions and keep warm.
- Boil a large pot of cold water and salt it generously.
- Add the pasta and cook, stirring occasionally until al dente, 4 to 5 minutes.
- Drain and return to pot when cooked and set aside.
- Add tomato halves and pesto to the Shrimp Scampi and stir.
- Saute shrimp and tomatoes for 3-4 more minutes.
- Pour shrimp and tomato mixture over pasta and toss.
- Serve hot.
- Garnish with Parmesan cheese.
