Slow Cooker Mocha Lava Cake
- 1/2 cup unsalted butter, melted
- 1 1/2 cup sugar
- 1 cup all-purpose flour
- 4 large eggs, beaten
- 2/3 cup unsweetened dark cocoa powder
- 2 tsp instant espresso powder
- 1/4 cup brewed espresso
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- Butter the ceramic insert of a slow cooker on bottom and halfway up the sides.
- In a large bowl mix all the ingredients well.
- Pour into buttered cooker bowl.
- Cover, set cooker to low and cook for 2 1/2 hours.
- Turn cooker off and let it set untouched for 30 minutes more.
- Serve with ice cream or a dollop of whipped cream.
