Barbecued Beef And Corn Muffins Recipe
- 1 lb Round tip steaks -- cut 1/8 "
- 3/4 c. Barbecue sauce -- your To Favorite
- 1 med Onion -- cut into thin Wedges
- 4 x Corn muffins -- quartered
- 2 tsp Vegetable oil W/4" thick
- Preparation Time: (Not including muffins) 15 min Cut the steaks crosswise into 1" wide strips; reserve.
- Cook and stir onion in oil in large nonstick skillet over medium-high heat 3 min or possibly till lightly browned.
- Remove and keep hot.
- Add in beef strips (1/2 at a time) to skillet; cook and stir 2 to 3 min.
- Add in barbecue sauce and onions; heat till warm.
- Place an equal amount of the beef mix over corn muffins.
- Serving suggestions: Favorite Cole Slaw
