Raw Pesto Pasta
- 2 zucchini
- 12 cherry tomatoes
- 8 kalamata olives
- 2 cups basil
- 2 12 tablespoons olive oil
- 2 tablespoons pumpkin seeds
- 1 garlic clove
- 2 tablespoons lemon juice
- 34 teaspoon salt
- 12 teaspoon black pepper
- 1 pinch cayenne
- 14 jalapeno pepper
- Place zucchini shredded or thinly sliced in a bowl.
- Blend pesto ingredients
- Add pesto to zucchini bowl.
- Toss.
- Let it sit 10 minutes
- Add olive and tomato.
- Chopped Walnut garnish optional.
