Bread & Butter Pudding Recipe
- 1/2 c. golden brown raisins
- 3 tbsp. butter
- 2 Large eggs
- 5 slices day-old bread
- 2 c. lowfat milk
- 1/2 c. sugar
- 1 teaspoon vanilla
- Soak raisins in warm water for 5 min.
- Trim crusts from bread, spread 1 side with butter, cut in half.
- Put bread butter side up in greased 8 inch baking dish.
- Drain raisins, sprinkle over bread.
- Heat lowfat milk and sugar till steaming.
- Stir in vanilla.
- In mixing bowl, beat Large eggs lightly, then gradually stir in warm lowfat milk.
- Pour mix over bread.
- Bake uncovered for 30 min in preheated oven at 350 degrees till golden or possibly knife inserted in center comes out clean.
- Serves 4.
