Super-Moist Pumpkin Spice Cake

  1. Preheat oven to 350 degrees (175 C.).
  2. Grease and lightly flour two 9-inch round cake pans; set aside.
  3. In large bowl, with electric mixer on low speed, beat all ingredients 30 seconds.
  4. Increase speed to medium, beat 2 minutes, scraping sides occaisionally.
  5. Pour batter into prepared pans.
  6. Bake 28 minutes or until toothpick inserted in centers comes out clean.
  7. On wire rack, cool 10 minutes.
  8. Remove from pans and cool completely.
  9. Sprinkle with confectioners' sugar or fill and frost with vanilla frosting.
