Chicken Spinach Soup Recipe

  1. Heat butter in 3 qt saucepan over medium high heat.
  2. Add in onion and garlic.
  3. Cut chicken breasts crosswise in narrow strips.
  4. Add in chicken strips and stir 2 to 3 min till chicken is no longer pink.
  5. Add in broth, water, frzn spinach and pasta.
  6. Cover and heat to high and bring to a boil.
  7. Reduce heat and simmer, covered till chicken and pasta are cooked 5 to 7 min.
  8. Meanwhile, whisk Large eggs, black pepper and crushed pepper in a small bowl till blended.
  9. Return soup to a boil and add in egg mix in a slow steady stream, using a back and forth motion.
  10. Remove from heat as soon as egg has set.
  11. Sprinkle each serving with cheese.
  12. Makes 4 servings.
