Stuffed Zucchini

  1. Cook zucchini in boiling salt water for 10 minutes.
  2. Drain.
  3. Scoop out insides, leaving 1/4" shell.
  4. Mash insides; drain well.
  5. Put shells in shallow baking dish.
  6. Remove casings from sausage.
  7. Break up meat.
  8. Cook sausage in skillet for 5 minutes.
  9. Add onion powder, garlic, mashed zucchini, bread crumbs, & parmesan cheese.
  10. Stir & heat for 1 minute.
  11. Spoon mixture into shells.
  12. Sprinkle with mozzarella.
  13. Bake in 350F oven for 15 minutes or until piping hot.
