Red Pepper Asiago Gougere Bites (Gluten-Free Recipe)

  1. Heat oven to 400F.
  2. Line baking sheets with parchment paper.
  3. Set aside.
  4. Place water and butter in heavy 2-quart saucepan.
  5. Cook over medium heat 6-8 minutes or until mixture comes to a full boil.
  6. Reduce heat to low; stir in gluten-free flour blend and garlic salt vigorously until mixture leaves sides of pan and forms a ball.
  7. Remove from heat.
  8. Add 1 egg at a time, beating well after each addition, until mixture is smooth.
  9. Stir in 1 cup cheese, bell pepper and basil.
  10. Immediately drop dough by rounded teaspoonfuls onto prepared baking sheets.
  11. Sprinkle each with 1/4 teaspoon remaining cheese.
  12. Bake 20-22 minutes or until golden brown.
  13. Serve warm.
  14. *Substitute 1 1/2 teaspoons dried basil leaves.
