Baked Potatoes With Sweet Pepper & Sausage Topping

  1. Pierce skin of potatoes and bake in a 400F (200C) degree oven for 50 minutes or until tender (alternately, microwave on HI for about 8 minutes.
  2. Let stand for 5 minutes).
  3. Meanwhile, in a large frying pan, heat oil on medium heat.
  4. Add onions and cook for about 3 minutes.
  5. Add peppers and mushrooms and cook for an additional 5 minutes.
  6. Stir in cooked sausage and tomato sauce (or salsa).
  7. Season with salt and/or pepper to taste.
  8. Heat through.
  9. Cut thin slice from top of each potato.
  10. Fluff potato with a fork.
  11. Spoon topping over potatoes.
