Denver Omelet Roll with Cheese Sauce

  1. Heat oven to 350 degrees F.
  2. Line 15x10x1-inch pan with parchment paper, with ends extending over shortest sides of pan.
  3. Spray with cooking spray.
  4. Cook peppers and onions in oil in large skillet on medium heat 5 min.
  5. or until peppers and onions are crisp-tender, stirring frequently.
  6. Beat eggs, milk and flour in large bowl with whisk until blended.
  7. Stir in ham and vegetables.
  8. Pour into prepared pan.
  9. Bake 14 to 16 min.
  10. or until edges are almost set.
  11. Top omelet with remaining cheese; bake 2 min.
  12. or until melted.
  13. Meanwhile, combine 1 cup cheese and sour cream in small saucepan; cook on low heat until cheese is melted and mixture is blended, stirring constantly.
  14. Remove from heat; cover until ready to use.
  15. Roll up omelet immediately, starting at one short end and peeling off paper as omelet is rolled.
  16. Place on platter; cut into slices.
  17. Serve with cheese sauce.
